  The online manual is worth looking at. I also have an exercise to introduce ARC/INFO in grid mode for rank beginners, and version for the drainage basin class. Also try a little WWW course which covers polygon intersection in excruciating depth. There is an ESRI online course There are a number of books at the bookstore, in the map library, and available from ESRI. See Harvey about the catalog, or look at it online.
